The Graphorn can only be acquired by taking on the main story quest “San Bakar’s Trial”. In this quest, the player must locate a Graphorn and use it as a key to enter the Keeper’s trial. Unlike other trials, this one is pretty straight-forward as you have to battle the Graphorn to get it.
This is a required mission to complete the game so there’s no way you would miss this. The mission however, is near the end of the game.

The Graphorn is different to the Thestral and the Hippogriff as it cannot fly. Although there is a limitation to its mobility, it can be used to bust through ground enemies as the Graphorn can charge with its large body. If you want to make a dramatic entrance into an enemy’s camp, best use the Graphorn.

Be wary when riding a Graphorn as a well-aimed shot from an enemy can dismount you and unsummon the Graphorn. Do not wander around too much if you are surrounded and try to put distance between you and your targets before you turn around for another charge.
Graphorns are large mountain-dwelling beasts that have a tough hide and two sharp horns. The tentacle-like appendages on Graphorns’ faces are used for capturing food and tending to their young. Graphorns are known for their aggressive nature; however, a witch or wizard has been known to befriend one in rare circumstances.
